So far, our specials have been Jerk Shrimp, Jerk Beef, Jerk Baby Back Ribs, Jerk St. Louis Ribs, Jerk Mushrooms, Jerk Tofu, Plantains and our Garden Salad w/mango vinaigrette dressing.

 

CUSTOM ORDERS

In addition to our lunch/dinner menu below, we prepare custom items from our full catering menu (salmon, shrimp, lamb, etc.) and custom sizes (1/2 and full-sized food pans) for clients to pick-up at the Farmers, Market.  Simply review our catering menu and email us your special request by the Thursday before (advance payment required).

 

 

Each slab of meat and chicken has been hand-rubbed, slow-marinated and then slow-smoked in our rotisserie Jerk BBQ Pit.  Each slab for chilling is then individually wrapped in professional plastic wrap and heavy duty foil to maintain product quality for quick-chilling, refrigeration and gentle reheating by the client, per instructions below.

Reheating Instructions

 

Recommended Reheating Instructions: For best results, place the foil and plastic wrapped slab of bbq (as supplied) into your oven set at 250 F for approximately 2 hours or as long as it takes to reheat to a temperature of 165 F.   Ribs will take a shorter time and very large slabs may take a longer time.  For pulled-pork or beef tenderness, reheat to 180 F or 1-2 hours longer.  Do not exceed an oven temperature of 275 F and do not use this method with regular household plastic wrap. 

 

Microwave Reheating Instructions: Remove foil and place plastic wrapped slab (as supplied) in microwave.  Set power level to 50% and reheat slab for approximately 8 minutes or as long as it takes to reheat to a temperature of 165 F, turning meat half way through.   Ribs will take a shorter time and very large slabs may take a longer time. 

 

Quick Microwave Reheating Instructions: For quick individual servings, remove slab from packaging and slice as many thin slices or rib bones as desired.  Place in microwave safe plate and brush each slice or rib with some guava bbq sauce.  A teaspoon of apple juice or beer in the plate also helps to keep the meat moist.  Cover plate with a damp paper towel or plastic wrap and reheat in microwave on high for 30-60 seconds or as long as it takes to reheat to a temperature of 165 F.
